Every good pub should be able to boast some interesting characters, each with a tale or two to tell. The Unique Hospitality Management team can certainly lay claim to a few of these. At Unique Hospitality Management, you’ll find the following eatery experts, who each bring their own very different – but very complementary flavours to the table… Meet Andrew, Jonathan, Mark, Wendy and the team.
As the chief architect, Andrew has a real passion for serving up exceptional sustenance in snug surroundings. A well-known figure in hospitality for over 20 years, he has graced the corridors of such esteemed establishments as the De Vere Grand Hotel in Brighton, The Swallow Royal Hotel in Bristol and the renowned Mal Maison. He has also won a number of industry awards, including a Commendation from the Queen for his contribution to hospitality.
GROUP OPERATIONS DIRECTOR
Jonathan’s role is quite simply to ensure that every guest enjoys the very best experience possible. He began his career at the tender age of 17 and swiftly rose through the ranks at The Birch Restaurant in Woburn. More recently, he established The Swan at Salford as one of the best places to dine in Milton Keynes and the surrounding area. In 2012 he received the highly acclaimed Acorn Award, which recognises the brightest prospects in the hospitality industry.
Mark knew from an early age that his destiny was to cook. Throughout his 15 years in the kitchen, he has worked in most areas of the catering industry from; Michelin fine dining, conference & banqueting, gastro pubs and luxury ski chalets, to name a few. Previously he was appointed Senior Head Chef at The Swan in Salford, and went on to win many awards with his team, within the industry.
CENTRAL SERVICES DIRECTOR
With more than 20 years’ experience in travel and tourism under her belt, Wendy has developed a keen eye for detail and is a stickler for high standards. She’s worked with some of the biggest companies in the world, from BMW to Abbey Life, and is dedicated to delivering excellence – first time, every time.
Stephen is the founder of highly successful Jamhouse Entertainment Limited which is a restaurant and Jazz-Centric venue operating in Birmingham and Edinburgh. Formerly the Chief Executive of Luminar Plc, a position he held for 22 years, Stephen has a wealth of experience spanning over 40 years within the leisure industry. His passion for Rugby Union is demonstrated by his non-executive directorship of Saracens who are current champions of the Premier League.
TRAINING & PROJECT MANAGER
Lee started his career and passion for all things hospitality at the age of 13 in Belfast working his way through school and university attaining a degree in Hospitality Management from Manchester Metropolitan. From there the bright lights of London beckoned and he spent the next seven years managing Brasserie bars across the City and West End. Seeking a new challenge and the opportunity to work with some great teams and chefs Lee made the move to Milton Keynes and never looked back. He worked his way up to become the General Manager at The Swan Salford where he developed many of his teams who have now gone on to run businesses of their own.
Clare brings with her over 15 years of marketing experience having worked for a craft gin distillery and many globally recognised brands including Levi Strauss and Avon. A Fashion Marketing graduate with a passion for the British countryside and, like many of the team, a big animal lover, taking great pride in taking care of her beloved four legged family members, her horse and dog. Clare takes great pride in managing the groups marketing activities.
Sean has been working in the Hospitality sector for the past 15 years. At the age of 22, Sean was the youngest landlord in the country. He loves the social aspect of his job meeting new people every day. Sean is married with three children. His favourite part of the job is presenting guests with fresh dishes and making sure everyone has a memorable experience at all of our pubs.
